Healthy Wedding Soup Recipe
1 pound of ground (red meat, chicken breast, turkey breast or lamb). I prefer turkey because there is not much fat and it doesn't have a strong taste like lamb.
2 TBSP of grapeseed oil
About 2 TBSP of gluten free bread crumbs
About 1 TBSP of Parmesan cheese
2 or 3 medium/large carrots chopped
1 stalk of celery chopped
1 bag of spinach
1 QT of chicken stock
1 medium onion chopped
1/2 cup of small gluten free pasta. I use Ancient Harvest Shells.
Salt, pepper, garlic powder and onion powder to taste.
1. Preheat the oven to 375 F.
2. In a small bowl, add ground meat, Parmesan cheese, bread crumbs, salt, garlic powder, onion powder, and egg. Mix them and make them into small balls. Cook in the oven for 10 minutes.
3. In large pan, add oil, onion, and celery and let it fry for 15 minutes until you can see a little bit of brown.
4. Add spinach, chicken stock, pasta. Cook until pasta is cooked. You can also add the meatballs at this point.
